3/52 Beca's 52 Pies Project

My 3rd pie in my 52 pies project is Lemon Meringue. I only made lemon meringue because my awesome rad friend Amy sent me a bottle of preserved lemon syrup from Morris Kitchen in Brooklyn, and I kid you not, I had the bottle opened and the filling for this pie on the stovetop in about 2 minutes flat. I like lemon meringue, but don't eat it often, the actual meringue hurts my teeth, and the textures throw me off sometimes. But, I love the flavor and had a pretty big slice of this as soon as it was cool. 
 This has been a fun project so far, and I am looking forward to seeing all the pies at the end of the year! I feel like there is always room to learn and grow and I look forward to the challenge. 

I used THIS recipe. It has been years since I made a lemon meringue, and I this one seemed the most similar to the recipes I have used in the past. I guess there isn't much you can do to change lemon meringue. 

Were getting ready for our flash sale (taking place on Tuesday now, we wanted to add some more stock before we did it) and I'm functioning on just a few hours of sleep. I think it's about that time. Today was rough, emotionally and business wise. But tomorrow will be better.

  1. Omg yummmm!!! Pie makes everything better, right?!?! Kudos on your meringue its fkn gorgeous, not an easy feat. This makes me want to hop in the car and drive to TN, just to have a piece , maybe a cup o joe, give you a great big hug & tell you "darling your beautiful and fkn awesome don't let life beat you down; fight back like the badass you are <3"

  2. Lemon meringue pie is my favorite pie!!! I recently bought a Kitchen Aid mixer and might be tempted to make this over the weekend!!! =)
